  • 2 sliced, for garnish scallions
  • 2 tablespoons, chopped, for garnish fresh parsley
  • 4 cups, for serving steamed white rice

Directions

Step 1

Slice the andouille sausage into 1/4-inch thick rounds.

Step 2

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside, leaving the rendered fat in the pot.
