Heat the chicken stock in a saucepan and keep it warm over low heat.
In a large skillet or saucepan, heat 1 tablespoon of olive oil over medium-high heat. Remove the casings from the Italian sausage and crumble it into the pan. Cook, stirring occasionally, for 5–7 minutes or until browned and cooked through. Transfer the sausage to a plate and set aside.
In the same pan, lower the heat to medium and add the remaining tablespoon of olive oil. Add the chopped onion and cook for 3–4 minutes, stirring, until softened and translucent. Add the minced garlic and cook for another 1 minute, stirring frequently, until fragrant.
Add the Arborio rice to the pan and stir well, allowing the grains to be coated in the oil and aromatics. Toast the rice for 2–3 minutes until the edges become slightly translucent.
Pour in the white wine and stir continuously until the wine is mostly absorbed by the rice.
