Cook the lasagne noodles in a large pot of salted boiling water until al dente, following package instructions. Drain and lay them flat on a clean towel to prevent sticking.
Heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart with a spatula as it cooks. Cook until browned and no longer pink, about 6-8 minutes.
