Ingredients

  • 6 cups Cornbread
  • 1 pound Italian sausage (sweet or spicy, casings removed)
  • 4 tablespoons Butter
  • 1 medium Yellow onion (diced)
  • 2 stalks Celery (diced)
  • 1 cup Pumpkin puree
  • 1.5 cups Chicken or vegetable broth
  • 1 tablespoon Fresh sage (finely chopped)
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 Eggs
  • 1 tablespoon Olive oil or cooking spray (for greasing the dish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil or cooking spray.

Step 2

Prepare 6 cups of cornbread by crumbling it into bite-sized pieces. If cornbread is freshly baked, allow it to cool completely before crumbling.

Step 3

In a large skillet over medium heat, cook the sausage until fully browned and crumbly, about 7-8 minutes. Remove the sausage with a slotted spoon and set aside, leaving the grease in the skillet.

Step 4

Add butter to the skillet and melt over medium heat. Stir in the diced onion and celery, cooking until softened, about 5 minutes.

Step 5

Reduce heat to low and stir in the pumpkin puree, fresh sage, thyme, salt, and black pepper. Cook for 2 minutes, stirring occasionally, until the mixture is well combined and fragrant.

Step 6

In a large mixing bowl, combine the crumbled cornbread, cooked sausage, and the pumpkin mixture. Toss until evenly distributed.

Step 7

In a small bowl, whisk together the eggs and chicken broth. Pour this liquid mixture over the stuffing ingredients and gently stir to moisten the cornbread evenly. Add more broth if the mixture seems too dry.

Step 8

Transfer the stuffing mixture to the prepared baking dish, spreading it out in an even layer.

Step 9

Bake the stuffing in the preheated oven for 35-40 minutes or until the top is golden brown and slightly crisp.

Step 10

Remove the dish from the oven and let it cool for 5-10 minutes before serving hot.
