Ingredients

  • 4 large eggs
  • 2 links sausage
  • 1 medium potato
  • 1 cup cheddar cheese
  • 0.5 medium onion
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped parsley

Directions

Step 1

Peel the potato and cut it into small, bite-sized cubes. Finely dice half the onion.

Step 2

In a medium skillet, heat the olive oil over medium heat. Add the diced potato and onion, and sauté for 8-10 minutes, stirring occasionally, until the potatoes are golden and tender. Remove from the skillet and set aside.

Step 3

Remove the sausage from its casing and crumble it into the same skillet. Cook over medium heat until browned and fully cooked, about 5-6 minutes. Remove from the skillet and set aside with the potatoes and onion.

Step 4

In a bowl, crack the eggs and whisk together with the milk, salt, and black pepper until well combined.

Heat a nonstick skillet over medium-low heat and melt the butter. Pour in the egg mixture and let it cook undisturbed for 2-3 minutes or until the edges start to set.

Once the omelet base is partially cooked, sprinkle the cooked sausage, potato-onion mixture, and shredded cheddar cheese over one half of the omelet.
