Ingredients

  • 12 oz smoked sausage
  • 1.5 cups pineapple chunks (fresh or canned, drained)

  • 1 medium onion
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tbsp cornstarch
  • 3 tbsp water
  • 2 tbsp vegetable oil
  • 1 tsp sesame seeds (optional, for garnish)
  • 2 green onions, sliced (optional, for garnish)
  • 0.25 tsp salt (optional)
  • 0.25 tsp black pepper (optional)

Directions

Step 1

Slice the smoked sausage into 1/4-inch thick rounds. Core and seed the bell peppers, then slice them into thin strips. Peel and slice the onion into thin wedges.

Step 2

In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, and water until smooth. Set aside.

Step 3

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the sliced sausage and cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage and set it aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the skillet. Toss in the bell peppers and onion, cooking for 3-4 minutes until they start to soften but remain crisp.
