Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Red bell pepper, diced
  • 1 medium Green bell pepper, diced
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 sheets Lasagna noodles
  • 1 pound Ricotta cheese
  • 1 Egg
  • 4 cups Mozzarella cheese, shredded
  • 1.5 cups Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into smaller pieces with a spatula. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic, red bell pepper, and green bell pepper, and cook for another 5 minutes until the peppers are tender.

Step 4

Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, crushed red pepper flakes, salt, and black pepper. Simmer the sauce for 10-15 minutes, stirring occasionally. Add the cooked sausage back into the sauce.

Step 5

While the sauce simmers, bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain the noodles and lay them flat on a baking sheet to prevent sticking.

Step 6

In a bowl, mix together the ricotta cheese, egg, 1 cup of shredded mozzarella, 1/2 cup of grated Parmesan, and chopped parsley. Stir until well combined.

Step 7

To assemble the lasagna, spread a thin layer of the meat sauce on the bottom of a 9x13-inch baking dish. Lay 3-4 lasagna noodles on top to completely cover the sauce.

Step 8

Spread a layer of the ricotta cheese mixture over the noodles, followed by a layer of meat sauce. Sprinkle a layer of shredded mozzarella on top.

Step 9

Repeat the layers (noodles, ricotta cheese mixture, meat sauce, mozzarella) until all ingredients are used, ensuring the final layer is mozzarella cheese.

Step 10

Sprinkle the remaining Parmesan cheese on top of the mozzarella for added flavor.

Step 11

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes.

Step 12

Remove the foil and bake for an additional 20-25 minutes, or until the cheese is melted, bubbling, and golden brown.

Step 13

Let the lasagna rest for 10 minutes before slicing and serving.
