Ingredients

  • 1 pound breakfast sausage
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 0.5 cup pecans, chopped
  • 4 cups day-old bread, cubed
  • 1.5 cups shredded cheddar cheese
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon ground mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a wooden spoon, until fully browned. Transfer the cooked sausage to a paper towel-lined plate to drain excess grease.

Step 3

In the same skillet, melt the butter and sauté the onion over medium heat until it becomes translucent and soft, about 5 minutes. Add the chopped pecans and sauté for another 2-3 minutes, stirring frequently. Remove from heat and set aside.

Step 4

Grease a 9x13-inch baking dish with butter or nonstick spray. Spread the cubed bread evenly over the bottom of the dish.

Step 5

Layer the browned sausage over the bread cubes, followed by the onion and pecan mixture. Evenly sprinkle the shredded cheddar cheese on top.

Step 6

In a large mixing bowl, whisk together the eggs, milk, ground mustard, salt, and black pepper until fully combined.

Step 7

Pour the egg mixture evenly over the layered ingredients in the baking dish, making sure the bread is well-soaked. Gently press down on the casserole to ensure everything is submerged in the egg mixture.

Step 8

Cover the dish with aluminum foil and let it sit in the refrigerator for at least 30 minutes, or overnight for the best flavor infusion.

Step 9

Once ready, bake the casserole covered for 30 minutes in the preheated oven. Then, remove the foil and bake for an additional 15 minutes or until the top is golden brown and the casserole has set.

Step 10

Remove the casserole from the oven and let it cool for 5-10 minutes. Optional: garnish with chopped parsley before serving.

Step 11

Slice into portions and serve warm. Enjoy your savory sausage pecan morning casserole!
