  • 6 cups chicken broth
  • 1 can diced tomatoes (14-ounce can)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup small pasta (e.g., ditalini, elbow, or small shells)
  • 2 cups fresh spinach, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup Parmesan cheese, grated (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Remove the casings from the Italian sausage if necessary and add the sausage to the pot. Cook, breaking it into small pieces with a wooden spoon, until it is browned and cooked through, about 5-7 minutes. Remove the cooked sausage with a slotted spoon and set aside.

In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
