Ingredients

  • 400 grams pasta (penne or rigatoni)
  • 2 tablespoons olive oil
  • 4 links sausages (Italian or pork)
  • 3 cloves garlic cloves, minced
  • 1 medium onion, finely chopped
  • 500 milliliters tomato passata
  • 2 teaspoons mixed dried Italian herbs
  • 0.5 teaspoons red chili flakes (optional)
  • 100 milliliters heavy cream
  • 50 grams parmesan cheese, grated
  • 200 grams mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Bring a large pot of salted water to a boil and cook the pasta according to package instructions, until al dente. Drain and set aside.

Heat the olive oil in a large skillet over medium heat. Remove the sausage casings, crumble the sausage meat into the skillet, and cook until browned, about 5-7 minutes. Break up the meat as it cooks.

Add the chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until softened and fragrant.
