Ingredients

  • 4 links Italian sausage
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 28 ounces canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces pasta (e.g., penne, rigatoni, or spaghetti)
  • 0.5 cup grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil in preparation for cooking the pasta.

Step 2

Remove the casings from the Italian sausage. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 7-8 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Add the crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes, salt, and black pepper to the skillet. Stir well to combine. Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally.

While the sauce simmers, cook the pasta according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of pasta water.

Add the cooked sausage back into the skillet with the sauce. Stir to combine and let it heat through for another 3-4 minutes.

If the sauce is too thick, stir in a little of the reserved pasta water, 1-2 tablespoons at a time, until it reaches your desired consistency.

Toss the cooked pasta with the sausage and sauce, ensuring the pasta is evenly coated.

Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley, if desired.
