Ingredients

  • 200 grams dark chocolate
  • 100 grams unsalted butter
  • 75 grams granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 200 grams digestive biscuits or tea biscuits
  • 50 grams chopped nuts (e.g., almonds, hazelnuts, or walnuts)
  • 2 tablespoons whole milk
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Place the dark chocolate, unsalted butter, granulated sugar, and cocoa powder in a heatproof bowl set over a pot of simmering water (double boiler). Stir occasionally until everything is melted and smooth. Remove from heat.

Step 2

Stir in the milk and mix until incorporated. Let the mixture cool slightly for about 5 minutes.

Step 3

While the chocolate mixture is cooling, break the digestive biscuits into small pieces (about the size of a peanut) using your hands or a rolling pin. Avoid turning them into crumbs; the chunks will provide texture.

Step 4

Fold the broken biscuits and chopped nuts into the melted chocolate mixture, ensuring everything is evenly coated.

Step 5

Place a large sheet of plastic wrap or parchment paper on your work surface. Spoon the mixture onto the wrap and shape it into a rough log using a spatula or your hands.

Step 6

Wrap the log tightly in the plastic wrap or parchment paper, shaping it further into a sausage-like cylinder. Twist the ends of the wrap tightly and secure them.

Step 7

Refrigerate the chocolate sausage for at least 2-3 hours, or until firm.

Step 8

Once chilled, remove the sausage from the wrap and roll it in powdered sugar to give it a 'cured sausage' appearance.

Step 9

Slice into thin rounds and serve. Store leftovers in the refrigerator for up to a week.
