Ingredients

  • 1 lb smoked sausage (such as kielbasa or bratwurst)
  • 1 large yellow onion
  • 3 whole garlic cloves
  • 4 medium red potatoes
  • 2 tbsp olive oil
  • 2 cups sauerkraut
  • 1 cup chicken broth
  • 1 tsp paprika
  • 0.5 tsp caraway seeds (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley (for garnish)

Directions

Step 1

Slice the smoked sausage into 1/4-inch rounds. Peel and thinly slice the onion. Mince the garlic. Wash and dice the red potatoes into bite-sized pieces.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 4-5 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and diced potatoes. Cook for 8-10 minutes, stirring occasionally, until the potatoes are slightly golden and the onion is softened.
