  • 1.5 cups chicken broth
  • 1 14-ounce can canned diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown on both sides, about 3 minutes per side. Remove and set aside.
