Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons unsalted butter (cold, cubed)
  • 0.75 cup whole milk
  • 1 pound ground breakfast sausage
  • 0.25 teaspoon black pepper
  • 2 large optional: eggs

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together flour, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Make a well in the center of the flour mixture and pour in the milk. Gently mix until the dough comes together, being careful not to overmix.

Step 5

Turn the dough onto a floured surface and knead it gently 3-4 times. Pat it into a 1-inch thick rectangle.

Step 6

Use a 2.5-inch biscuit cutter or an inverted glass to cut out biscuits. Re-roll scraps as needed to make more biscuits. Place them on the prepared baking sheet, about 1 inch apart.

Step 7

Bake the biscuits in the preheated oven for 12-15 minutes, or until golden brown.

Step 8

While the biscuits are baking, shape the ground breakfast sausage into 4-6 even patties.

Step 9

Heat a skillet over medium heat and cook the sausage patties for 4-5 minutes per side, or until browned and fully cooked through. Sprinkle with black pepper while cooking.

Step 10

Optional: If you'd like to add eggs, cook them to your preference (scrambled, fried, or over-easy) in the same skillet as the sausage for extra flavor.

Step 11

To serve, split the warm biscuits in half and layer each with a sausage patty. Add an egg if desired.

Step 12

Serve immediately and enjoy your hearty Sausage 'n Biscuits!
