  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 1 cup dry green or brown lentils, rinsed
  • 1 can canned diced tomatoes (14.5 ounces)
  • 6 cups low-sodium chicken or vegetable broth
  • 1 leaf bay leaf
  • 2 cups kale or spinach, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the sausage and cook, breaking it into small pieces with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the cooked sausage and set it aside, leaving the drippings in the pot.

To the same pot, add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
