  • 1 pound Italian sausage (mild or spicy)

  • 4 cups Kale, stems removed and leaves chopped
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 0.5 cup Parmesan cheese, grated (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the Italian sausage, breaking it into small pieces with a spoon, and cook until browned, about 5-7 minutes. Remove the cooked sausage with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion and sauté over medium heat until softened, about 4-5 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Add the diced potatoes to the pot and stir for 2 minutes to coat in the aromatics.
