  • 4 cups kale, stems removed and leaves roughly chopped

  • 1 teaspoon dried oregano
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the sausage, breaking it into small pieces with a wooden spoon, and cook until browned, about 6-8 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.
