Ingredients

  • 12 oz Andouille sausage
  • 2 tbsp Olive oil
  • 1 medium, diced Yellow onion
  • 1 medium, diced Green bell pepper
  • 3 stalks, diced Celery
  • 4 cloves, minced Garlic
  • 14.5 oz (1 can) Canned diced tomatoes
  • 2 cups Chicken stock
  • 1 cup Long-grain white rice
  • 1.5 tbsp Cajun seasoning
  • 1 tsp Dried thyme
  • 1 leaf Bay leaves
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 stalks, chopped (for garnish) Green onions
  • 2 tbsp (for garnish) Chopped parsley

Directions

Step 1

Cut the andouille sausage into rounds and set aside.

Step 2

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 3

Add the sausage slices to the pot and cook until browned, about 4-5 minutes. Remove the sausage and set aside, leaving the rendered fat in the pot.

Step 4

Add the diced onion, bell pepper, and celery to the pot. Sauté until softened, about 5 minutes.

Stir in the minced garlic and cook for another minute, until fragrant.
