Ingredients

  • 4 links sausages (Polish kielbasa or smoked sausage)
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, finely sliced
  • 2 cloves garlic, minced
  • 2 cups sauerkraut, drained
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • 1 teaspoon caraway seeds (optional)
  • 1 cup chicken broth
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Slice the sausages into 2-inch pieces and set them aside.

Step 2

In a large skillet or sauté pan, melt the unsalted butter over medium heat.

Step 3

Add the sliced onion to the skillet and sauté for 5-6 minutes, stirring occasionally, until it becomes soft and golden brown.

Step 4

Stir in the minced garlic and cook for another 30 seconds, or until fragrant.

Step 5

Add the sliced sausages to the skillet and cook for 4-5 minutes, turning occasionally, until they are browned on all sides.

Step 6

Stir in the drained sauerkraut, Dijon mustard, honey, paprika, and caraway seeds (if using). Mix well to evenly coat all the ingredients.

Step 7

Pour in the chicken broth, stirring to combine, and bring the mixture to a gentle simmer.

Step 8

Season with salt and black pepper to taste. Cover the skillet with a lid and let the sausage and sauce simmer for 15-20 minutes to allow the flavors to meld together.

Step 9

Remove the lid and taste the sauce, adjusting seasonings if needed. Let it cook uncovered for a few more minutes if you desire a thicker sauce.

Step 10

Garnish with freshly chopped parsley before serving.

Step 11

Serve hot with crusty bread, mashed potatoes, or boiled potatoes for a comforting Polish-inspired meal.
