Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cups russet potatoes, diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound ground sausage
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 2 cloves minced garlic
  • 1 teaspoon smoked paprika
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat a large skillet over medium heat and add the butter and olive oil.

Step 2

Once the butter has melted, add the diced potatoes in an even layer. Sprinkle with salt and black pepper.

Step 3

Cook the potatoes for 8-10 minutes, stirring occasionally, until they are golden brown and crisp around the edges. Remove the potatoes from the skillet and set aside.

Step 4

In the same skillet, add the ground sausage. Cook for 5-6 minutes, breaking it apart with a spatula, until browned and fully cooked. Drain any excess grease, if needed.

Step 5

Add the diced onion, red bell pepper, green bell pepper, and minced garlic to the skillet with the sausage. Sauté for 5 minutes, stirring often, until the vegetables are softened.

Step 6

Sprinkle the smoked paprika over the sausage and vegetables, and stir to combine.

Step 7

Return the cooked potatoes to the skillet and gently toss everything together. Continue cooking for 2-3 minutes to allow the flavors to meld.

Step 8

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 9

Garnish with fresh parsley, if desired, and serve warm.
