Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter
  • 1 pound ground breakfast sausage
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 1 egg, beaten
  • 1 cup pecans, chopped
  • 2 green onions, sliced
  • 0.5 teaspoon pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

In a medium saucepan, bring the water and salt to a boil. Gradually whisk in the grits, reduce the heat to low, and cook for 5-7 minutes until thickened, stirring frequently. Remove from heat and stir in butter until melted.

Step 3

In a skillet over medium heat, cook the sausage, breaking it into crumbles, until it’s browned and fully cooked. Drain any excess grease and set aside.

Step 4

In a large mixing bowl, combine the cooked grits, shredded cheddar cheese, cooked sausage, milk, beaten egg, half of the chopped pecans, and the green onions. Add pepper and paprika, and mix thoroughly.

Step 5

Pour the mixture into the prepared casserole dish, spreading it evenly.

Step 6

Sprinkle the remaining chopped pecans over the top of the casserole for added crunch.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the casserole is set and golden on top.

Step 8

Remove from the oven and let it cool for 5 minutes before serving. Garnish with additional green onions, if desired.
