Ingredients

  • 1 pound Pork breakfast sausage
  • 2 tablespoons Unsalted butter
  • 0.25 cup All-purpose flour
  • 3 cups Whole milk
  • 0.5 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.25 teaspoon Ground cayenne pepper (optional)

Directions

Step 1

Heat a large skillet over medium heat. Add the pork breakfast sausage and break it apart with a wooden spoon.

Step 2

Cook the sausage until it is browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet with a slotted spoon and set it aside, leaving the rendered fat in the skillet.

Step 3

If needed, add the unsalted butter to the skillet. Allow it to melt and combine with the sausage drippings.

Step 4

Sprinkle the all-purpose flour over the fat and butter mixture in the skillet. Stir continuously for 1-2 minutes to create a smooth roux. The mixture should look slightly golden and pasty but not browned.

Step 5

Gradually pour in the whole milk, about 1/2 cup at a time, whisking constantly to avoid lumps. Continue whisking until the mixture thickens and becomes smooth.

Step 6

Return the cooked sausage to the skillet and stir to incorporate it into the gravy.

Step 7

Season the gravy with salt, black pepper, and ground cayenne pepper (if using). Taste and adjust seasonings as needed.

Step 8

Reduce the heat to low and let the gravy simmer gently for an additional 3-4 minutes, stirring occasionally.

Step 9

Serve the sausage gravy hot over warm, flaky biscuits. Enjoy immediately.
