Ingredients

  • 1 pound breakfast sausage
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)
  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 4 eggs
  • 2 green onions (optional for garnish)

Directions

Step 1

Peel and dice the russet potatoes into small, evenly-sized cubes.

Step 2

Heat a large cast-iron or non-stick skillet over medium heat. Add olive oil and spread the diced potatoes evenly in the skillet.

Step 3

Cook the potatoes for 10-12 minutes, stirring occasionally, until they are golden brown and crispy. Remove the potatoes from the skillet and set them aside.

Step 4

In the same skillet, add the breakfast sausage. Brown the sausage over medium heat, breaking it up into small crumbles, until it is fully cooked, about 6-8 minutes.

Step 5

Sprinkle the flour over the cooked sausage and stir well to coat the sausage in the flour. Cook for 1-2 minutes to remove the raw flour taste.

Step 6

Slowly pour in the milk while continually stirring. Keep stirring until the mixture thickens and forms a creamy gravy, about 4-5 minutes.

Step 7

Season the sausage gravy with salt, black pepper, and optional red pepper flakes. Taste and adjust seasoning if needed.

Step 8

Preheat your oven to 375°F (190°C).

Step 9

Transfer the crispy potatoes back into the skillet, spreading them out evenly. Pour the sausage gravy over the potatoes, ensuring they are all covered.

Step 10

Sprinkle the shredded cheddar cheese evenly on top of the sausage gravy.

Step 11

Using the back of a spoon, create four small wells in the mixture and crack one egg into each well.

Step 12

Carefully transfer the skillet to the oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.

Step 13

Remove the skillet from the oven and let it rest for 2-3 minutes. Garnish with chopped green onions if desired.

Step 14

Serve hot, scooping out portions that include potatoes, gravy, cheese, and an egg. Enjoy your hearty sausage gravy breakfast skillet!
