Ingredients

  • 1 pound ground breakfast sausage
  • 0.5 cup sun-dried tomatoes (in oil, drained and chopped)
  • 10 large eggs
  • 0.75 cup whole milk
  • 1 cup cheddar cheese (shredded)
  • 0.25 cup green onions (chopped)
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon unsalted butter (for greasing the baking dish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with unsalted butter and set it aside.

Step 2

In a large skillet, cook the ground breakfast sausage over medium heat until fully browned and crumbled, breaking it apart with a spoon as it cooks. Drain any excess grease and set the sausage aside to cool slightly.

Step 3

In a large mixing bowl, whisk together the eggs, whole milk, Italian seasoning, salt, and black pepper until fully combined.

Step 4

Stir the cooked sausage, chopped sun-dried tomatoes, shredded cheddar cheese, and chopped green onions into the egg mixture until evenly distributed.

Step 5

Pour the mixture into the prepared baking dish, spreading it out evenly with a spoon or spatula.

Step 6

Place the casserole dish in the preheated oven and bake for 35-40 minutes or until the top is golden brown and the casserole is set in the center. Insert a toothpick or knife to check; it should come out clean.

Step 7

Remove the casserole from the oven and let it rest for 5-10 minutes before slicing into squares.

Step 8

Serve warm and enjoy! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
