Ingredients

  • 8 ounces Ground sausage
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Milk (for eggs)
  • 2 tablespoons Fresh parsley (chopped, optional)
  • 0.25 teaspoons Salt (for filling)
  • 0.25 teaspoons Ground black pepper
  • 1 tablespoon Olive oil or butter (for cooking sausage)

Directions

Step 1

In a large mixing bowl, whisk together the flour, milk, 2 eggs, melted butter, and a pinch of salt until the batter is smooth. Let the batter rest for 10-15 minutes.

Step 2

While the batter rests, heat olive oil or butter in a skillet over medium heat. Add the ground sausage and cook until browned and fully cooked, breaking it into small pieces with a spatula. Set it aside.

In a bowl, whisk the remaining 2 eggs with 2 tablespoons of milk, salt, and black pepper. Scramble the eggs in a nonstick skillet over medium heat until just set. Combine the scrambled eggs with the cooked sausage and shredded cheddar cheese. Mix well and set aside.
