Heat a large skillet over medium heat. Add the ground sausage and cook until browned and fully cooked through, breaking it apart into small crumbles with a spatula. Drain any excess fat and set the sausage aside to cool slightly.
In a large mixing bowl, combine the cooked sausage, shredded cheese, and chopped green onions. Mix well to evenly distribute the ingredients.
Lay out the flour tortillas on a clean surface. Spoon about 1/3 to 1/2 cup of the sausage and cheese mixture onto one half of each tortilla. Fold the other half of the tortilla over the filling to create a semi-circle.
