  • 28 ounces diced tomatoes (canned, with juice)
  • 6 cups chicken broth
  • 2 medium potatoes, diced
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sausage to the pot and cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the drippings in the pot.

Add the diced onion to the pot and sauté for 4-5 minutes, until softened.
