  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 0.5 cup diced onion
  • 0.25 cup chopped cilantro
  • 0.5 cup salsa
  • 1 medium avocado

Directions

Step 1

Crack the eggs into a medium bowl. Add the milk, salt, and black pepper; whisk until well combined.

In a large non-stick skillet, warm the olive oil over medium heat. Add the breakfast sausage and cook, breaking it into small pieces, until no longer pink, about 5-7 minutes.

Reduce the heat to low and pour the egg mixture into the skillet with the sausage. Stir gently with a spatula, cooking until the eggs are scrambled and cooked through, about 3-5 minutes.
