Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 4 tablespoons Unsalted butter
  • 1 large Yellow onion, diced
  • 3 stalks Celery stalks, diced
  • 3 cloves Garlic cloves, minced
  • 10 cups Crusty bread, cut into 1-inch cubes
  • 2.5 cups Chicken or vegetable broth
  • 0.25 cup Fresh parsley, chopped
  • 1 tablespoon Fresh thyme leaves, chopped
  • 1 tablespoon Fresh sage leaves, chopped
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Kosher salt
  • 2 large Large eggs, lightly beaten
  • 1 teaspoon Olive oil (optional, for greasing the dish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with olive oil or butter.

Step 2

Heat a large skillet over medium heat. Add the sausage and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 7-8 minutes. Transfer the cooked sausage to a large mixing bowl, leaving the rendered fat in the skillet.

Step 3

Melt the butter in the same skillet over medium heat. Add the diced onion and celery, and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 1 minute. Remove from heat and add the mixture to the bowl with the sausage.

Step 4

Add the bread cubes to the sausage mixture and toss to combine.

Step 5

In a separate bowl, whisk together the chicken or vegetable broth, eggs, parsley, thyme, sage, salt, and pepper.

Step 6

Pour the liquid mixture over the bread and sausage, stirring gently until the bread is evenly moistened. Allow the mixture to sit for 10 minutes so the flavors can meld.

Step 7

Transfer the mixture to the prepared baking dish, spreading it out evenly. Cover the dish with aluminum foil.

Step 8

Bake the dressing in the preheated oven for 30 minutes. Then remove the foil and bake uncovered for an additional 20 minutes, or until the top is golden and slightly crispy.

Step 9

Remove the dish from the oven and allow it to cool for 5-10 minutes before serving. Garnish with additional chopped parsley if desired.
