Ingredients

  • 4 links Italian sausage (mild or spicy)
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Onion
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 loaf Focaccia bread
  • 4 slices Provolone cheese slices
  • 1 cup Arugula (optional)
  • 2 tablespoons Balsamic glaze (optional)

Directions

Step 1

Heat a large skillet over medium heat. Add the Italian sausages and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and set aside.

Step 2

While the sausages cook, thinly slice the red bell pepper, yellow bell pepper, and onion.

Step 3

In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced bell peppers and onion, stirring occasionally, and cook for 8-10 minutes until softened and slightly caramelized.

Add the minced garlic to the skillet and cook for 1 minute until fragrant. Season the vegetable mixture with salt and black pepper. Remove from heat and set aside.

Preheat your oven to 375°F (190°C).

Slice the focaccia bread horizontally to create a top and bottom half. If the loaf is very thick, you can remove a bit of the inner bread to make room for the filling.
