Heat a large skillet over medium heat. Add the Italian sausages and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and set aside.
While the sausages cook, thinly slice the red bell pepper, yellow bell pepper, and onion.
In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced bell peppers and onion, stirring occasionally, and cook for 8-10 minutes until softened and slightly caramelized.
Add the minced garlic to the skillet and cook for 1 minute until fragrant. Season the vegetable mixture with salt and black pepper. Remove from heat and set aside.
Preheat your oven to 375°F (190°C).
Slice the focaccia bread horizontally to create a top and bottom half. If the loaf is very thick, you can remove a bit of the inner bread to make room for the filling.
Place the bottom half of the focaccia bread on a baking sheet. Layer the provolone cheese slices evenly on top.
Slice the cooked sausages in half lengthwise and layer them on top of the cheese.
Spoon the cooked bell pepper and onion mixture over the sausages.
Place the top half of the focaccia bread on the sandwich. If desired, brush a little olive oil on the top for extra flavor and a golden finish.
Bake the focaccia sandwich in the oven for 8-10 minutes, or until the bread is warmed through, and the cheese is melted.
Remove the sandwich from the oven. If using, layer the arugula on top of the filling and drizzle with balsamic glaze.
Carefully slice the sandwich into 4 portions and serve immediately.
