  • 1 stalk celery stalk, diced
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned cannellini beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat.

Add the Italian sausage and cook, breaking it into crumbles with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and set aside.

In the same skillet, add the diced onion, garlic, carrot, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.
