Ingredients

  • 6 pieces sausages (pork or beef)
  • 2 tablespoons olive oil
  • 1 large onion, diced

  • 1 medium celery stalk, diced
  • 400 grams canned chopped tomatoes
  • 2 tablespoons tomato paste
  • 250 milliliters chicken or vegetable stock
  • 400 grams canned cannellini beans, rinsed and drained
  • 400 grams canned butter beans, rinsed and drained
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Heat 1 tablespoon of olive oil in a large oven-safe skillet or casserole dish over medium heat.

Step 3

Add the sausages and cook for 5-6 minutes, turning occasionally, until browned on all sides. Remove the sausages and set them aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened.

Stir in the smoked paprika, dried thyme, and tomato paste, and cook for 1-2 minutes until fragrant.

Bake for 30 minutes, then uncover and bake for an additional 10 minutes to slightly thicken the sauce.
