Ingredients

  • 2 tablespoons olive oil
  • 200 grams thick-cut bacon
  • 500 grams sausages (pork or beef)
  • 1 large onion
  • 3 units garlic cloves
  • 2 medium carrots
  • 400 grams canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 200 milliliters chicken or beef stock
  • 2 units fresh thyme sprigs
  • 1 kilogram potatoes
  • 50 grams butter
  • 100 milliliters milk
  • 100 grams cheddar cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Peel and chop the potatoes into chunks. Place them in a pot of salted water and boil until tender, about 15-20 minutes.

Step 3

While the potatoes are boiling, heat olive oil in a large skillet over medium heat.

Step 4

Chop the bacon into small pieces and add it to the skillet. Cook until crispy, then remove and set aside on a plate lined with paper towels.

Remove the sausage meat from their casings and add it to the same skillet. Break the meat apart with a spoon and cook until browned. Remove the sausage meat and set aside.

In the same skillet, add more olive oil if necessary. Dice the onion, mince the garlic, and finely chop the carrots. Add them to the skillet and cook for 5-7 minutes until softened.

Reduce the heat to low and let the mixture simmer for 15-20 minutes, allowing the flavors to meld and the sauce to thicken. Remove the thyme sprigs before assembling the pie.

Once the potatoes are tender, drain them and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper. Stir in half of the grated cheddar cheese.

Spoon the sausage, bacon, and tomato mixture into an ovenproof baking dish. Spread the mashed potatoes evenly over the top and fluff with a fork to create texture.

Sprinkle the remaining grated cheese over the mashed potatoes.

Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbling.

Remove from the oven and allow to rest for 5 minutes before serving.
