Ingredients

  • 8 cups day-old bread (cubed, sourdough or country loaf)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 large leeks (white and light green parts, sliced thin)
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 pound pork sausage (mild or spiced to preference)
  • 1 large Granny Smith apple (peeled, cored, diced)
  • 3 stalks celery (diced)
  • 1 teaspoon poultry seasoning
  • 1 tablespoon fresh sage (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 2 cups chicken or turkey stock
  • 2 large eggs (lightly beaten)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a large baking dish or casserole dish and set aside.

Step 2

Spread the cubed bread onto a baking sheet in a single layer. Toast in the oven for 10-15 minutes, or until slightly crisp. Remove and let cool.

Step 3

Heat a large skillet over medium heat. Add 2 tablespoons of butter and the olive oil.

Step 4

Add the sliced leeks to the skillet. Sprinkle in the salt and pepper, and cook for 5-7 minutes, stirring occasionally, until soft and caramelized. Remove the leeks and set aside.

Step 5

In the same skillet, add the sausage. Cook, breaking it into small pieces with a spoon or spatula, until browned and fully cooked, about 8-10 minutes. Remove the sausage and set aside.

Step 6

In the same skillet, melt the remaining 2 tablespoons of butter. Add the diced apple, celery, poultry seasoning, and sage. Cook for 5 minutes, stirring frequently, until the apples are softened.

Step 7

In a large mixing bowl, combine the toasted bread cubes, cooked leeks, cooked sausage, apple mixture, and fresh parsley. Toss to distribute ingredients evenly.

Step 8

In a separate bowl, whisk together the chicken or turkey stock and eggs. Pour this mixture over the bread mixture, stirring gently until the bread is evenly moistened but not overly soggy.

Step 9

Transfer the stuffing mixture into the prepared baking dish. Cover with aluminum foil and bake for 30 minutes.

Step 10

After 30 minutes, remove the foil and bake for an additional 20 minutes, or until the top is golden brown and crisp.

Step 11

Serve immediately, garnished with additional parsley if desired. Enjoy your flavorful Sausage Apple Leek Stuffing!
