Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with butter or non-stick cooking spray.
In a large skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked. Break it into crumbles as it cooks. Drain excess grease and set aside.
While the sausage cooks, peel and dice the apple into small, bite-sized pieces.
In a large mixing bowl, combine the bread cubes, cooked sausage, diced apple, and 1 1/2 cups of shredded cheddar cheese. Toss to distribute evenly, then transfer the mixture to the greased baking dish.
