Preheat your oven to 425°F (220°C).
In a large, oven-safe skillet (10-12 inches in diameter), cook the pork breakfast sausage over medium heat until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving any rendered fat in the pan.
Add 2 tablespoons of the unsalted butter to the skillet and melt over medium heat. Once melted, add the peeled and sliced apple. Cook for 3-4 minutes, stirring occasionally, until the apple slices are slightly softened. Remove the skillet from the heat.
In a blender or large mixing bowl, combine the all-purpose flour, whole milk, eggs, granulated sugar, vanilla extract, and ground cinnamon. Blend or whisk until the batter is smooth and free of lumps.
Stir the cooked sausage pieces into the skillet with the apples. Pour the pancake batter over the sausage and apples, spreading it evenly.
Cut the remaining 2 tablespoons of unsalted butter into small pieces and scatter them over the top of the batter.
Carefully transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the pancake is puffed up and golden brown around the edges.
Remove the skillet from the oven and let the pancake cool for 5 minutes. It will deflate slightly as it cools, which is normal.
Dust the top of the pancake with powdered sugar, slice into wedges, and serve warm. Optionally, drizzle with maple syrup for extra sweetness.
