Ingredients

  • 12 oz lean turkey sausage (links or ground)

  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups canned white beans (like cannellini), rinsed and drained
  • 1 14.5 oz can diced tomatoes (no salt added)
  • 2 cups kale or spinach, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the olive oil.

Step 2

Remove the turkey sausage from its casing if using links, crumble it into the pot, and cook for about 5-6 minutes until browned. Remove the sausage from the pot and set aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-6 minutes until the vegetables begin to soften.

Add the minced garlic and cook for an additional minute until fragrant.
