Slice the sausages into 1-inch pieces. Core and slice the red and green bell peppers into thin strips. Peel and slice the carrot into thin rounds. Mince the garlic and grate the ginger. Slice the green onions finely.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sausage pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove the sausages from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the garlic and ginger, and sauté for about 30 seconds until fragrant.
