  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 50 grams Parmesan cheese (grated, for serving)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 100 milliliters Water (reserved from pasta cooking)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rigatoni pasta according to the package instructions until al dente. Reserve 100 milliliters of the pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet or sauté pan, heat the olive oil over medium heat. Add the Italian sausage (casings removed) and break it into smaller pieces using a wooden spoon. Cook the sausage until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pan and set it aside on a plate.

Step 3

In the same pan, add the finely chopped onion and cook over medium heat until softened and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Add the canned crushed tomatoes, tomato paste, dried oregano, dried basil, crushed red pepper flakes (if using), salt, and black pepper to the pan. Stir well to combine and bring the mixture to a simmer.

Return the cooked sausage to the pan and stir it into the tomato sauce. Reduce the heat to low and let the sauce simmer gently for 10-15 minutes, allowing the flavors to meld together.

Adjust the consistency of the sauce by stirring in the reserved pasta cooking water, a little at a time, until the sauce reaches your desired thickness.

Add the cooked rigatoni pasta to the sauce, tossing gently to coat the pasta evenly in the sausage and tomato mixture.
