  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 2 medium Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 1 large Russet potato, peeled and diced
  • 6 cups Chicken broth
  • 1 14-ounce can Canned diced tomatoes (with juices)
  • 1 bunch Swiss chard, stems removed and leaves chopped
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Crushed red pepper flakes (optional)
  • 0.5 cups Parmesan cheese, grated (for serving)

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Remove the sausage from its casing (if applicable) and crumble it into the pot. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

Add the diced potato to the pot and stir for 1-2 minutes to coat it in the aromatics.
