Ingredients

  • 12 oz Andouille sausage
  • 2 tbsp Olive oil
  • 1 medium, diced Yellow onion
  • 2 medium, diced (any colors) Bell peppers
  • 3 cloves, minced Garlic
  • 14.5 oz (1 can) Canned diced tomatoes
  • 2 cups Chicken broth
  • 1 cup, uncooked White rice
  • 1 tbsp Cajun seasoning
  • 1 tsp Paprika
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 stalks, sliced for garnish Green onions

Directions

Step 1

Slice the andouille sausage into 1/4-inch rounds.

Step 2

Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium heat. Add the sausage slices and cook for 5-7 minutes until browned. Remove the sausage and set aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the skillet. Sauté the diced onion and bell peppers for 5 minutes until softened.

Step 4

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Step 5

Pour in the canned diced tomatoes (including juices), chicken broth, and uncooked rice. Stir to combine.

Step 6

Mix in the Cajun seasoning, paprika, dried thyme, salt, and black pepper.

Return the browned sausage to the skillet. Stir everything together.

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 20 minutes, or until the rice is tender and fully cooked.
