Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 medium russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups baby spinach or kale
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional, for heat)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the Italian sausage to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.

Step 3

Add the diced onion to the pot and sauté for 3-4 minutes, or until softened and translucent.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds to 1 minute, until fragrant.

Step 5

Add the diced potatoes to the pot. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 6

Using a potato masher or the back of a spoon, partially mash some of the potatoes in the pot to thicken the soup slightly. Leave some chunks for texture.

Step 7

Stir in the cooked sausage, heavy cream, and baby spinach or kale. Simmer for 2-3 minutes, or until the greens are wilted and the soup is heated through.

Step 8

Season the soup with salt, black pepper, and red pepper flakes (if using). Taste and adjust the seasoning as desired.

Step 9

Serve hot, garnished with crusty bread or a sprinkle of grated Parmesan cheese, if desired. Enjoy!
