  • 1 pound breakfast sausage
  • 4 medium russet potatoes

  • 1 cup whole milk
  • 2 cups shredded cheddar cheese

  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 2 stalks green onions

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with non-stick spray or a small amount of olive oil.

Step 2

Peel and dice the russet potatoes into small, bite-sized pieces. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until golden and slightly crispy. Transfer the potatoes to the prepared casserole dish.

Step 3

In the same skillet, crumble the breakfast sausage and cook over medium heat until browned and fully cooked, about 6-8 minutes. Use a slotted spoon to transfer the sausage to the casserole dish, spreading it evenly over the potatoes.

Finely chop the onion and mince the garlic. Add the onion to the same skillet and sauté for 3-4 minutes, until softened and translucent. Add the garlic and cook for an additional minute. Remove from heat and spread the onion and garlic mixture over the sausage and potatoes in the casserole dish.

In a large mixing bowl, whisk together the eggs, whole milk, salt, black pepper, and paprika until well combined. Stir in 1 1/2 cups of shredded cheddar cheese, reserving 1/2 cup for topping later.
