  • 1 pound Italian sausage (mild or hot)

  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoons Red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 12 ounces Pasta (penne, rigatoni, or your choice)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 cup Parmesan cheese (grated)

Directions

Step 1

Bring a large pot of salted water to a boil for the pasta. Cook the pasta according to the package instructions until al dente, then drain and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it into chunks with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced red, yellow, and green bell peppers, along with the onion sliced into strips. Sauté for 5-7 minutes, or until the vegetables are softened.

Return the cooked sausage to the skillet and combine it with the sauce and vegetables. Let it simmer for another 3-5 minutes to meld the flavors.

Add the cooked pasta to the skillet and toss to coat the pasta evenly in the sauce.

Sprinkle the chopped fresh parsley over the pasta and toss lightly. Serve hot, garnished with grated Parmesan cheese.
