  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 3 Garlic cloves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Line a large baking sheet with parchment paper or lightly grease it with cooking spray.

Step 3

Slice the bell peppers into thin strips and the onion into wedges. Place them in a large mixing bowl.

Step 4

Mince the garlic cloves and add them to the bowl with the peppers and onions.

Step 5

Drizzle the vegetables with olive oil. Then, sprinkle them with oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes (if using). Toss everything until evenly coated.

Step 6

Spread the seasoned vegetables evenly over the prepared baking sheet.

Step 7

Nestle the sausage links among the vegetables on the baking sheet, ensuring everything fits in one even layer.

Step 8

Place the baking sheet in the preheated oven and bake for 25 minutes.

Step 9

After 25 minutes, carefully flip the sausages and stir the vegetables for even cooking.

Step 10

Return the baking sheet to the oven and bake for an additional 10 minutes, or until the sausages are fully cooked (internal temperature of 160°F) and the vegetables are tender and slightly caramelized.

Step 11

Remove from the oven and let rest for 5 minutes before serving.

Step 12

Garnish with fresh parsley and serve hot. This dish pairs wonderfully with crusty bread, pasta, or over a bed of rice.
