Ingredients

  • 6 links Italian sausage (sweet or spicy)
  • 2 tablespoons Olive oil
  • 3 medium Bell peppers (red, yellow, or green)
  • 1 large Yellow onion
  • 3 whole Garlic cloves
  • 2 tablespoons Tomato paste
  • 14 ounces Crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the sausage links and cook until browned on all sides, about 5-7 minutes. Remove the sausages from the skillet and set them aside.

Step 2

While the sausages are cooking, slice the bell peppers and onion into 1/2-inch strips. Mince the garlic cloves.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté for 5-7 minutes, stirring occasionally, until they begin to soften.

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Push the vegetables to one side of the skillet and add the tomato paste in the center. Cook the tomato paste for 1 minute to deepen its flavor, then stir it into the vegetables.

Add the crushed tomatoes, dried oregano, dried basil, crushed red pepper flakes (if using), salt, and black pepper. Stir to combine.

Return the browned sausages to the skillet, nestling them into the sauce and vegetables. Lower the heat to medium-low, cover the skillet with a lid, and let simmer for 25 minutes, stirring occasionally, until the sausages are cooked through and tender.
