Ingredients

  • 400 grams penne pasta
  • 2 tablespoons olive oil
  • 250 grams Italian sausage (casings removed)
  • 200 grams baby bella (cremini) mushrooms, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1 tablespoon yellow mustard
  • 1 tablespoon whole-grain mustard
  • 200 milliliters heavy cream
  • 100 milliliters chicken or vegetable stock
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the sliced mushrooms and cook until browned and their moisture is mostly evaporated, about 5 minutes.
