Ingredients

  • 12 ounces mostaccioli pasta
  • 1 pound Italian sausage (mild or spicy, based on preference)
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 garlic cloves, minced
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the mostaccioli pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet over medium-high heat, add olive oil. Remove the casing from the Italian sausage and crumble it into the skillet. Cook the sausage, breaking it into small pieces, until browned and fully cooked. Remove the sausage from the skillet and set aside.

Step 3

Reduce the heat to medium, and in the same skillet, melt the unsalted butter. Add the minced garlic and sauté until fragrant, about 30 seconds.

Step 4

Sprinkle the flour into the skillet and whisk to form a roux. Cook the roux for 1-2 minutes, stirring continuously.

Step 5

Gradually add the whole milk to the skillet, whisking constantly to prevent lumps from forming. Once the milk is incorporated, stir in the heavy cream.

Step 6

Continue to cook the sauce, stirring frequently, until it begins to thicken, about 5-7 minutes.

Step 7

Stir in the grated Parmesan cheese, salt, black pepper, and, if desired, red pepper flakes. Mix until the cheese is fully melted and the sauce is smooth.

Step 8

Add the cooked sausage back to the skillet, followed by the drained mostaccioli pasta. Toss to coat the pasta evenly in the sauce. If the sauce is too thick, add the reserved pasta water a little at a time until the desired consistency is reached.

Step 9

Garnish the dish with fresh parsley and serve immediately. Enjoy your delicious Sausage and Mostaccioli with Rich Cream Sauce!
