  • 2 medium carrots (diced)
  • 2 stalks celery stalks (diced)
  • 3 cloves garlic cloves (minced)
  • 1 cup dried green or brown lentils (rinsed and drained)
  • 14 ounces canned diced tomatoes (undrained)
  • 4 cups chicken or vegetable broth
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups baby spinach (optional, for garnish)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sliced sausages to the pot and cook for 5-7 minutes, turning frequently, until browned. Remove the sausages and set them aside on a plate.

In the same pot, add the chopped onion, diced carrots, and diced celery. Cook for 5 minutes, stirring occasionally, until the vegetables soften slightly.

Add the minced garlic and cook for another 1 minute, stirring constantly, until fragrant.
